In Florence, eating is never just about food. It’s a moment to meet, talk, and spend time together. Tuscan cuisine was born from this very idea: simple dishes, honest ingredients, and tables where people are happy to stay a little longer.
When we imagined Trattoria Dedo, this was exactly what we had in mind: creating a place where people can sit down, eat well, and feel at ease.
Tuscan bread and traditional Tuscan cuisine
One of the most distinctive elements of Florentine cooking is pane sciapo, the traditional Tuscan bread made without salt.
This simple ingredient gave life to many classic recipes of the region, including:
- pappa al pomodoro – a thick Tuscan soup made with bread, tomatoes, garlic, olive oil, and fresh basil.
- ribollita – a hearty vegetable and bread soup traditionally prepared with beans, kale, and seasonal vegetables.
- panzanella – a refreshing summer salad made with Tuscan bread, tomatoes, cucumbers, onion, and olive oil.
These dishes come from a rural culinary tradition built on resourcefulness and simple ingredients, yet over time they have become symbols of Tuscan gastronomy.
In our kitchen, we start from the same principle: simplicity and the quality of the ingredients.
Meat in the Florentine tradition
Another central element of the Florentine table is meat. The bistecca alla fiorentina is certainly the most famous dish, but Tuscan tradition goes far beyond that: braised meats, roasts, and recipes prepared with slow cooking and great respect for the ingredient.
These are dishes that require time and attention, but they reward you with deep and authentic flavors.
Wine as part of Tuscan culture
In Tuscany, wine has always been part of everyday life.
For this reason, our wine list gives particular space to labels from the region: Chianti, Pinot Nero, and wines from small producers in the Mugello, an area that holds a special meaning for us.
Wine accompanies the dishes and completes the experience at the table.
Our idea of Tuscan cuisine
When we opened Trattoria Dedo, in the center of Florence, our goal was to bring to the city a simple Tuscan cuisine rooted in the territory and prepared with care.
Many of our ingredients come from the Mugello, where everything began: tortelli, cheeses, and wines from small local winemakers.
On our menu you’ll find dishes that belong to the Florentine tradition, prepared every day with carefully selected ingredients and with the respect these recipes deserve.
