Trattoria Dedo: Tuscan cuisine in the heart of Florence

New aromas fill the streets of San Lorenzo. The smell of warm bread, of sauce simmering, of meat sizzling on the grill. These are the scents of a trattoria that opens with a smile and the desire to make everyone at the table feel good.

We are Trattoria Dedo, the new Tuscan trattoria in Piazza del Mercato Centrale, in the liveliest heart of Florence.

Our idea of Tuscan cuisine, the real one

We do what we know best: simple, honest Tuscan cooking, rooted in the land.
Our menu tells the story of traditional dishes, prepared with a modern touch and great attention to ingredient quality.

Many of those ingredients come from Mugello, where it all began. That’s where our tortelli, cheeses, and wines from small local producers come from. And then there are the comforting flavors of home, like pappa al pomodoro with fresh basil and good bread.

On the wine list, you’ll also find Chianti, Pinot Noir, and bottles selected from Mugello producers we love. Once again, it’s our idea of Tuscany: grounded and authentic.

Every day we open our doors with the desire to do things right. For lunch, dinner, and also in the afternoon — with a lighter selection of cured meats and cheeses, to enjoy with a glass of wine.

Selected ingredients: flavor that starts from the land

Among our charcuterie boards, you’ll find Casentino prosciutto and local cheeses: products carefully selected for their history, quality, and authentic flavor. Casentino prosciutto comes from pigs raised in the mountains and aged in pure air, paired with our chef’s crostini and organic preserved vegetables—an appetizer with the true taste of Tuscany.

Dishes that tell a Tuscan story

And then there are dishes that show extra care: like the pigeon risotto, with its pink, juicy breast — served like a real statement of intent.

Even in the classics, we add something of our own: our gnudi are prepared fresh every day with spinach and sheep’s ricotta, then dressed with butter and sage, crushed walnuts, and aged pecorino. A simple recipe, made with care and flavor.
